├ 赤唐辛子の輪切り・・１本分
├ ごま油・・・適量
【作り方】
１）れんこんの皮をむき乱切りにしたらボールに入れ水をたっぷり入れ、酢（材料表記外）も加えアクをぬく。
※酢は大さじ１くらい
２）鶏もも肉の脂を取り除き一口大に切って下味の塩、しょうがの絞り汁をふる。
３）にんじんは皮をむき乱切りにする。
４）（１）のれんこんをザルにあげ洗い、水けをきる。
５）（２）の鶏もも肉の水けをキッチンペーパーでかるく取る。
６）鍋にごま油を入れ熱し、赤唐辛子の輪切りを入れ更に（５）の鶏肉を入れ鶏肉に軽く色がついたら（３）のにんじん、（４）のれんこんを入れさっと炒める。
７）鶏ガラスープを入れ沸騰したら中火の弱火にしアクをとり酒、砂糖を加えしょう油は大さじ１を加え落とし蓋をして２０分煮る。
８）残りのしょう油大さじ１を加え入れ再び落とし蓋をし、５～６分煮る。
９）落とし蓋をとって少し火を強めひと煮する。器に盛る。
