【まずは出汁の事】
出汁はお料理はもちろん、お味噌汁やスープにも出汁で料理が決まると言って良いほど大事ですが、時間がない時などは市販の『だしの素』や『スープの素』『鶏がらスープの素』など今はたくさんの出汁が売っているので使っちゃいましょう☆時間があれば自分で出汁を作ってみるのも良いですよね♪
出汁のとり方についてはメインサイトのスープ、出汁のとり方の基本
を参考にして下さいね☆
また市販の出汁を使う場合はメーカーによって濃度がちがうので各メーカーの分量表を見て使いましょう☆
【お味噌汁の基本】
１）鍋にだし汁を入れ煮立てる。
２）味噌は直接入れるとダマが残ってしまうのでボールなどに味噌を入れて煮立っただし汁をおたま１杯分程入れ味噌をよく溶かしてから味噌を鍋に入れる。
３）味噌を入れたらグツグツ煮ないで煮立つまで中火の強めで火にかけ煮立ったら直ぐに弱火にして煮る。
※味噌を入れてからグツグツ強火で煮るとせっかくの味噌の栄養分が無くなってしまいます。又、煮過ぎると塩辛くなってしまいます。
